Such a shame how fast it moves. I can’t believe Monday is tomorrow. It feels like the weekend just started – and yet Friday feels like ages ago! Crazy. Denver is just a giant time warp, I’m pretty sure.
And I don’t hate it.
The Anusara-inspired class taught Saturday afternoon at Vital Yoga was such a needed break after a long, long night out partying on Friday. It was incredibly meditative and soothing, but DANG it was hard. I’ve never breathed and sweated so hard while basically not moving. We worked in some seriously challenging asanas, and then HELD them for ridiculously long moments. So delicious.
But man am I sore today. Sneezing hurts so good.
After cleaning, blogging, and making plans for the evening, I settled in for an epic nap. 4 hours of sleep just doesn’t cut it for me, so I caught up with another 2. I was ravenous when I awoke!
I was hankering for some tofu, so I got right to work slicing this up and prepping it for a quick pan fry.
After frying up the tofu and then coating it in a drizzle of soy sauce, peanut dressing, rice vinegar, maple syrup, and sriracha, I plated some garlic-seared broccoli with carrots, cashews, bean sprouts, and scallions for a delicious low-carb vegan meal. Perfect for another night spent in a scandalous Halloween costume.

I thought Saturday night I probably couldn’t top the adventures of Fridays: 2 house parties and 2 bars, but indeed, I managed.
The next morning we all got moving (eventually) and headed to Trattoria Stella (the one in City Park) for an AMAZING brunch.
A friend and I split a few plates.
OMG this meal was out of control. Between this location and the one in the Highlands, these are hands down the two best meals I’ve had since moving. It’s hard to impress me at brunch, but Stella Too as it’s affectionately called truly took it to the next level. YUM.
The afternoon included some shopping adventures.
Colorado Ski and Golf is a giant ski and snowboard retailer, and it was HOPPIN’ today. Everyone is gearing up for the season to start. A bunch of mountains are opening this weekend, so folks are getting ready.
I am so blown away by the prices of all this. On one hand, I’m so excited to be joining the ranks of the local skiers who own their gear and drool over all the coolest new items, but on the other hand I feel a little apprehensive about how prohibitively expensive it really is. When all is said and done, I’ll have spent far too much money on this. Here’s hoping it’s worth it.

I did manage to score some ski boots this afternoon that were seriously reduced in price, and I’m stoked to get skis and bindings and finally get out there. Bring it on!
Later this afternoon, there was a long urban walk. The snow from earlier this week is all gone, and the day was just gorgeous.
I came home and enjoyed a snack before embarking on this epic blogging adventure.
And now I am plum tuckered out. On the agenda tonight? TV, pumpkin soup, and an early bedtime. Enjoy the rest of your Sunday! xoxo
