That’s about all I can say about today. I spent all day yesterday thinking it was Wednesday, which makes ACTUAL Wednesday that much harder to stomach. It’s not a big deal, but now it’s 8:00 pm and all I want to do is go to bed. After this (and maaaaybe some Glee), I totally will.

Breakfast had to be super speedy because I was running late.

Yogurt topped with banana, raspberries, granola, Kashi Go Lean, chias, protein powder, and slivered almonds.

And then doused in ~1/2 cup of almond milk.

This was seriously good. I miss carbs in the mornings. :( Luckily, I can eat them guilt free for the next few days until my half on Sunday!

Lunch ended up being a highlight of my day. A super friendly co-worker of mine invited me to join him and his brother (who works across the hall from us) to eat outside on the impeccably manicured grounds of our office.

They all chuckled and seemed perplexed when I whipped out my camera to photograph this.

I'd be perplexed too. A sandwich is not interesting.

Luckily, the filling was “exotic” enough to forgive me my boring photography. A sandwich with turkey, spinach, dijon mustard, honey, and sliced pears, alongside leftover edamame, the rest of the pear, and those dang Nut Thins.

A serving size is only 16 crackers? AS. IF.

It was so great to get to know my co-workers a little bit better by the light of the relentless Colorado sun. And they were intrigued (even interested?) when I brought up the concept of Lunch Bunch… :)

And then I was sucked into my phone, never to return again.

My ears hurt just looking at this picture.

I spent basically the rest of the work day on a call going over some fairly technical stuff, which was SO interesting, but taught me a valuable lesson: calls over two hours must be conducted via headphones.

When I finally came up for air, I was STARVING. I missed 3:00 snack by a mile this afternoon. I’m a baby and need to feed every three hours or I turn into a monster. Don’t believe me? Ask my mother! (Or um, any ex-boyfriend I’ve ever had…)

Tasty stuff! Anything dipped in chocolate wins in my book.

When I finally escaped from the office this evening, the sky was doing some pretty magical things.

I love you, Rocky Mountains.

That’s when I heard about this and had a minor identity crisis. I’ve been a Mac FanGirl since my very beginning. I’ve only ever owned Apple products, I’m most comfortable working with Apple products (shame my office runs on PCs), and the brand has long been the be-all end-all source of technology for me. The world is a lesser place without Steve Jobs. NPR put it rather well, “Steve Jobs, the Poet of the Computer World, Died.”

I truly hope Apple carries on his legacy. In the midst of the turmoil that is our current world, Apple could always be counted on to shine some elegant and geeky light in the darkness. I hope to still be an avid supporter in 10 years.

I had grand plans to be social, or run, or be productive tonight…and I’m currently failing. I managed to photograph my pile of (clean!) dishes, but not actually do anything about them.

Dish Jenga - remove one and the whole pile crashes down.

I did make dinner though. Sort of.

I'm not sure when I turned 90 and started craving boiled broccoli, though.

This was actually inspired by a dish my chef at Zola made for about a month on her ever-changing menu, and although this was a pale, pale comparison to her Chili Poached Broccoli Salad, it certainly was tasty!

I boiled the broccoli in water heavily spiced with sriracha and red pepper flakes while roasting up some garden fresh tomatoes in truffle salt and olive oil. I topped them with goat cheese, but saved one to smush into a toasted English muffin rubbed with garlic a la Pan Con Tomate. Surprisingly filling!

And designed to offer room for dessert. :)

I basically have some snacky semi-healthy desserty item every night…that I pretty much never post here, because I don’t want everyone to know quite how much I eat. But rest assured – there’s at least one snack a day that absolutely goes undocumented. Also, they’re exceptionally strange concoctions (microwaved applesauce and carrots anyone? frozen blueberries with almond milk and Grape-Nuts? Peanut butter and jelly cereal?) and since I already eat questionably as it is…

It’s for the best. But straight up I’m about to go do something funky with pineapple. And cornmeal. Yeah. We’ll see how it goes. :)
